- 100g frozen mixed berries
- 120g walnuts
- 200g self-raising flour
- 75g sugar
- 100g butter, melted
- 1 whole egg
- 1/4 cup honey
- 150 ml cream
- 500ml cold water (for steaming)
- Crème Chantilly to serve
- Fresh Mint Leaves and a few extra berries to serve
METHODIn your COOK EXPERT fitted with the WHISK ATTACHMENT and the XXL METAL BOWL, add the add self-raising flour, mixed berries, sugar, a whole egg, cream, melted butter, and honey. Set your machine to EXPERT programme and Speed 3, 1 minute, no heat and run. Press STOP 30 seconds into the cycle, add the walnuts and scrape down the sides of the bowl with a spatula. Run the remainder of the programme.
Spoon the mixture from the metal bowl into 4 lined individual moulds. Give them each a tap to even out the mixture and remove any air bubbles.
Meanwhile clean your EXPERT BOWL and add 500ml cold water. Place the pudding bowl into the steamer basket and place into the metal bowl. Set your COOK EXPERT to STEAM for 45 minutes and run.
When the puddings are cooked, remove the moulds from the COOK EXPERT, place each onto a large dinner plate, remove the baking paper, sprinkle with icing sugar, a few berries and some finely shredded mint. Slice and serve with Crème Chantilly.
