Summer Berry Pudding with Magimix

INGREDIENTS

TO SERVE

Crème Chantilly
Extra Bitton Jam, warmed slightly
Fresh mint leaves
Extra berries
Icing sugar, for dusting

METHOD

Fit your Cook Expert with the whisk attachment and XXL metal bowl. Add the self-raising flour, mixed berries, sugar, egg, cream, melted butter, Bitton Citrus Honey, and Bitton Strawberry & Vanilla Jam. Set to the Expert programme at Speed 3 for 1 minute, with no heat.

After 30 seconds, stop the machine, add the walnuts and scrape down the sides of the bowl with a spatula. Resume the programme to finish mixing.

Spoon the mixture evenly into four lined individual moulds. Tap each mould gently to level the mixture and remove any air bubbles.

Clean the Expert bowl and add the cold water. Place the moulds into the steamer basket and lower into the metal bowl. Set the Cook Expert to Steam for 45 minutes.

Once cooked, carefully remove the moulds and turn each pudding onto a serving plate. Remove the baking paper, dust lightly with icing sugar and garnish with fresh berries and finely shredded mint.

Serve warm with Crème Chantilly and a generous spoonful of warmed Bitton Jam.
