Bitton Croque Madame

INGREDIENTS

  • 50 g butter, softened
  • 12 thick slices good quality white bread
  • 6 slices ham
  • 200 ml mornay sauce
  • 200 g mozzarella, grated
  • 1 tbsp butter, for frying
  • 4 free-range or organic eggs

METHOD

Lay the bread slices out on a board in rows of three. Butter each slice generously, right to the edges.

Place the ham over the bread slices in the first and third rows. Spread all slices evenly with the mornay sauce, ensuring full coverage to prevent the edges from drying out. Sprinkle generously with the grated mozzarella.

Stack the bread to create four three-tiered sandwiches: bread with mornay and cheese, a layer with ham in the centre, then another layer of mornay and cheese on top.

Cut each stack diagonally in half to create eight sandwich halves. Place on a baking tray and grill under a hot grill until golden brown and bubbling.

Meanwhile, melt the remaining butter in a large non-stick frying pan and fry the eggs to your liking. Keep warm.

To serve, place two grilled sandwich halves and a small salad on each plate. Top with a fried egg and finish with a dollop of Bitton Spicy Tomato Sauce.
